Long before I ever got shown the "correct" way to play a guitar, I naturally picked it up in the 'left-hand' position. It makes sense to me that my dominant (right) hand should do the intricate work of fretting the strings while my useless left hand just went back and forth strumming them.

"Or is this because it's originally an organ piece?" Yes - that's exactly why your fingers are having to play such a range in the hands. The left-hand bass part is played by the feet on the organ, freeing up both your hands to play the rest.

Yes, completely normal - in fact, place your hand on the table, fingers spread out, with your middle finger tucked right in under your palm. You'll be able to raise all your other fingers independently, but your ring finger won't budge.

Just to add that although you don't need to have the previous Grades to attempt the next level, you now MUST have passed Grade 5 Theory before attempting any practical exams of Grade 6 and above.

Congrats on your Grade 8! Don't forget that there's a third option - don't do a diploma! Are you doing a diploma for a reason? If not, and you're just doing it for "fun" then just go with the one which has the most interesting syllabus in your opinion. If you're doing it as a stepping stone to something even higher (a Masters degree? a job?) then look closely at the requirements and choose the one that fits best.
