in the jquery link you just post I think there s an option that can do the job (, menus: "div.menuElement".) basically if I understand well it's to append the result of the menu in another structure then the <ul><li> one...But for now I don't know how to achieve this with my piece of code...

here is the class, blog.squantin.fr/…, I think you have the right idea but instead of passing the key to sfWidgetFormDoctrineChoiceWithParams, I pass it directly from the form with key_method attribute.
