Ok, but I make an SMTP connection to my Postfix server, and then I use this connection to send an mail to 'blah.com'. Then blah.com requires a TLS session to accept that mail. Then my Postfix server is a server for me, but a client for the server at blah.com.

You can use whatever you want. Zend Framework is just an scaffolding, if you don't want to use their specific components you're free to do so, but if you use their components then it will be easier for you to combine with the rest of the structure or other components.
